Tai Ping Hou Kwei

Voted as a National Treasure Tea in 1982, Tai Ping Hou Kwei Huan Shan (Yellow Mountain) tea is grown in Taiping County, An Huei Province. The area is known as Monkey Ditch and Monkey Hill, which is at an elevation of 2200 feet. To preserve freshness and optimum moisture, the large tender leaves are picked only in spring during early morning fog. Pairs of large leaves are pressed during the drying process making them flat, giving the tea its distinctive appearance.
The brew is very fresh and green with some downy appearance, aromatic and lightly sweet. It can hold many infusions.
